Do I need Rollmark to follow these guides?

No. Each guide uses the built-in Photos app and Settings. Rollmark is mentioned only where it has a matching feature.

Are deleted photos gone right away?

No. iOS moves them to Recently Deleted and keeps them for 30 days, so you can recover them in that window. Storage comes back after they leave the album.

What is the safest way to start a big cleanup?
